Sweet and spicy chipotle wings recipe

There are times when regular buffalo wings just won't fit the bill. When you need something extraordinary to serve your guests, these sweet and spicy wings bring a delicious change of pace to your table.

  • 1 (15-ounce) can tomato sauce
  • 2 tablespoons butter
  • 1/2 cup honey
  • 1/4 cup chipotle flavor hot sauce
  • zest of three limes
  • 3 tablespoons fresh lime juice
  • 1/4 teaspoon cayenne pepper
  • 4 to 5 pounds chicken wings
  • salt and pepper
  • 1 cup flour
  • vegetable oil
Add tomato sauce and butter to a small sauce pan and cook over medium heat until the butter has melted. Add honey, hot sauce, lime zest and juice and cayenne pepper. Bring to a boil then reduce heat and simmer for 5 minutes. Stir often to prevent scorching. When done, set aside. Remove and discard wing tips. Sprinkle wings with salt and pepper then dredge lightly in flour. Shake off excess flour. Add an inch and a half of oil to a deep skillet and heat to 375 degrees F. Fry wings in small batches, until golden and crispy, 8-10 minutes. Remove from oil and drain on paper towels. When all wings have been fried, place them in a large bowl and cover with sauce mixture, tossing to coat. Allow to stand for 5-6 minutes before serving.
