Basic gluten-free muffin recipe

Going gluten-free no longer means having to give up your favorite baked goods. It simply means you have to shop a little smarter. 

  • 1 1/2 cups almond meal
  • 1/4 cup all purpose gluten-free flour mix
  • 1/4 cup tapioca flour
  • 1 tablespoon gluten free baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons guar gum
  • 1/2 teaspoon cinnamon
  • 1/2 cup softened butter
  • 3/4 cup honey
  • 2 eggs
  • 1/4 cup buttermilk
Preheat oven to 400 degrees F. Mix all dry ingredients together and set aside. In a large bowl, beat butter and sugar until light and fluffy. Add eggs and milk-beat on low until just blended. Add dry ingredients and beat on low just until batter is moist. Fill paper muffin cups 3/4 full. Bake 30 minutes.
