Cherry glazed pork roast recipe

The blend of cherry preserves and spices make an ordinary pork roast into something exciting and flavorful.

  • 3-3 1/2 lb pork loin roast
  • 1 teaspoon salt
  • 1 (12 oz) jar of cherry preserves
  • 1/4 cup cider vinegar
  • 2 tablespoons light corn syrup
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
Preaheat oven to 350 degrees F. Line a roasting pan with aluminum foil and place a roasting rack on top. Place roast on the rack and sprinkle with salt. Bake 45 minutes. In a small saucepan, mix together remaining ingredients and bring to a boil over medium heat. Reduce heat and simmer for 2 minutes. Reserve 1/2 cup for serving. Frequently brush roast with remaining glaze while cooking another 45 minutes (roast is done when a meat thermometer reads 160 degrees F). Remove from oven and let rest for 10 minutes before slicing and serving. Spoon a little of the reserved glaze on each serving.
