Ham and cheddar muffins recipe

These savory muffins are a great way to get your entire breakfast covered in one or two tasty treats.

  • 3 tablespoons butter or margarine
  • 1 medium-size sweet onion, finely chopped
  • 1 1/2 cups all-purpose baking mix
  • 2 cups (8 ounces) shredded sharp cheddar cheese, divided
  • 1/2 cup milk
  • 1 large egg
  • 1 cup finely chopped cooked ham
Preheat oven to 425 degrees F. Melt butter in a skillet, add onion and cook 3 to 5 minutes or until tender. Combine baking mix and half of cheese in a large bowl. Form a well in the center of the mixture. Stir together milk and egg-add to cheese mixture, stirring until just moistened. Add onion and ham, stir until just mixed. Fill muffin tins 2/3 full and sprinkle with remaining cheese. Bake 15-18 minutes, until golden.

Cook's Notes-you can substitue swiss cheese (for cheddar) or sausage (for ham) in this recipe and achieve equally delicious results.
