White chicken chili recipe

 Some say chili without beef isn't chili. I say try this recipe then get back to me!

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 1 pound cooked chicken, cubed
  • 1 can diced green chile peppers
  • 4 cups chicken broth
  • 2 cans great northern beans, rinsed and drained
  • 2 tablespoons fresh cilantro
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
In a large skillet, heat oil and saute onion and garlic until translucent. Add all ingredients to the crock pot and cook 4-6 hours. If chili needs thickened, add 2 tablespoons of cornstarch to 1/4 cup cold water-mix well and stir into pot. Cook an additional 15 minutes to thicken.
