Stuffed blueberry French toast bake recipe

This baked French toast is stuffed full of delicious flavor. Make it the next time you want to impress your loved ones at the breakfast table.

STUFFED BLUEBERRY FRENCH TOAST BAKE

  • 16 slices day old bread, preferably sourdough or French bread
  • 1 (8 ounce) package cream cheese, softened
  • 1 cup blueberries
  • 3 cups whole milk
  • 3 eggs
  • 1/3 cup blueberry syrup
  • 1 teaspoon vanilla extract
  • 1/4 cup sugar
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon cinnamon
  • 1/4 cup sugar
  • 1 cup cold water
  • 2 tablespoons cornstarch
  • 1 cup sugar
  • 1 tablespoon butter
  • 1 cup blueberries

  • Directions
    Grease a 9X13 baking dish generously with butter. Spread 4-6 slices of bread with cream cheese and line the bottom of the baking dish with them, cheese side up. Sprinkle with one cup blueberries. Cube remaining slices of bread then add to the baking dish. In a medium size bowl, whisk together milk, eggs, syrup, vanilla and sugar. Pour over top of the ingredients in the baking dish. Cover and refrigerate overnight. Preheat oven to 350 degrees F. Combine nutmeg, cinnamon and sugar in a small bowl. Uncover the baking dish and sprinkle mixture over top the bread. Cover with foil and bake 25-30 minutes. A knife inserted into the middle of the pan will come out clean when ready. While French toast is baking, prepare the blueberry topping by combining water, corn starch and sugar in a saucepan, stirring well to remove break up any clumps of corn starch. Bring to a simmer over medium heat and cook until thickened. When ready, remove from heat and add butter and blueberries, breaking up some of the berries to release their juices. Stir well and serve with French toast.
