Easter is less than a week away, and if you're like me, you are already tired of looking at those colored eggs sitting in your refrigerator. Maybe you haven't colored your eggs yet, but if you have kids, your time is coming (insert evil laugh here). In the name of fairness, we always color way too many eggs just to make sure each child gets to color a "fair and reasonable" amount of eggs. Fair and reasonable slowly turns to dread as we realize that most of the eggs we colored are going to end up in the garbage. My kids aren't big fans of egg salad sandwiches, but they have been known to eat it on occasion, if I really don't give them a choice. I hate forcing food on my kids, so I tried to come up with a more kid friendly recipe. This one has more flavor than most, which got mad props from the girls.

  • 1/2-1 cup shredded Cheddar cheese
  • 1 small fresh jalapeno, seeded and chopped
  • 1/2 cup sweet pickle relish
  • 1/4 cup mayonnaise
  • 1 tablespoon horseradish
  • 6 hard-boiled eggs, chopped
  • salt and pepper to taste
Combine all of the ingredients in a bowl except the eggs, salt and pepper and bacon. Stir until well combined. Stir in eggs and add salt and pepper to taste. This should make enough filling to make 6 sandwiches. Cover and refrigerate any that you don't use right away.

Cook's Notes-adding some cooked, crumbled bacon to this recipe adds another dimention of flavor.
