Split pea soup is not something most of us would consider traditional St. Patty's Day fare, but the color certainly fits the bill! And since we are looking at a damp and chilly weekend for celebrating, now seems like the perfect time to make a batch of this soup.

SPLIT PEA SOUP
  • 6 slices bacon, cooked crisp, drained and crumbled, save grease
  • 1 small white or yellow onion, chopped
  • 1 large carrot, chopped
  • 2 cloves garlic, minced
  • 4 cans vegetable or chicken broth
  • 1 1/2 cups green split peas
  • 2 bay leaves
  • 1-2 teaspoons chopped fresh rosemary, depending on your taste
  • salt and pepper to taste
Directions
Add all of the ingredients except the salt and pepper, including the reserved bacon grease, to your crock pot and cook on low 6-8 hours. When ready to serve, remove bay leaves and puree the soup, if desired, before serving.
