Campfire chicken stew recipe

Memorial Day has come and gone, school has let out for the year-summer is here! If your summer plans include camping, you will want to keep this recipe handy as it makes a great meal for hungry campers.

  • 1 (3-4 pound) fryer chicken, cut up
  • 4 medium potatoes, peeled and sliced thin
  • 1 cup carrots, sliced thin
  • 1 can condensed cream of mushroom soup
  • 1/4 cup water 
  • salt and pepper to taste
Cut 4 large pieces of aluminum foil and fold each in half. Set aside. Brown the chicken on the grill for approximately 3-5 minutes per side. When ready, place 2 pieces of chicken on each sheet of foil along with equal amounts of potato and carrot. Top with soup, water, and seasonings. Fold the foil around the edges, pinching tightly to seal each packet shut. Place on grill and cook over medium heat 20-25 minutes on each side, until the juices from the chicken run clear. Open gently to allow steam to escape and serve while hot.
