Summer melon salad recipe

If you love summer melons, you are going to fall in love with this light and flavorful salad.

  • 1/2 small watermelon, rind removed, diced and seeds removed
  • 1/2 honeydew melon,rind removed, diced and seeds removed
  • 1/2 cantaloupe, rind removed, diced and seeds removed
  • 1/2 cup chopped, cooked pancetta
  • 3 tablespoons packed fresh mint leaves, chopped 
  • 1/8 teaspoon salt 
  • pinch cayenne pepper 

  • 1/4-1/2 cup sugar, to taste
  • 2 tablespoons water
  • 1/4 cup fresh lime juice 
  • 2 small jalapenos, stems removed, seeded and minced 

In a large bowl, combine the diced melons and set aside. Over medium high heat, cook the ingredients for the syrup in a sauce pan. Bring to a simmer and cook for 3-4 minutes. When thickened, remove from heat and strain. Throw away the jalapenos and allow the remaining mixture to cool. Add remaining ingredients to the melon dices and toss to combine. Pour the syrup over top of the salad and stir to combine. Cover and refrigerate until time to serve.
