Zucchini spaghetti with lemon chive dressing from Atkins

If you are following a low carb or no carb diet, it can become frustrating finding new recipes that keep you on track while providing the flavor you crave. This recipe from Atkins provides both! This recipe makes 4 servings and provides the following:

ZUCCHINI SPAGHETTI with LEMON CHIVE DRESSING
  • 1 Pound medium zucchinis 
  • 1 Teaspoon salt 
  • 1 Tablespoon lemon juice 
  • 1/2 Cup heavy cream 
  • 1/4 Cup fresh chives, chopped 
Directions
Cut zucchini into long-thin strips - julienne. Place in a colander with salt and allow to stand for 15 minutes. Squeeze excess moisture from zucchini. Combine lemon juice, salt, cream and chives. Toss with zucchini and serve.
