Portobello and goat cheese pita recipe

This recipe is a delicious way to combine two of my favorite foods-portobello mushrooms and Goat Cheese . I had never tried goat cheese until I worked at Cobblestone Cafe and now I am hooked!

  • 1 1/2 teaspoons minced garlic 
  • 1 teaspoon olive oil 
  • 4 (6-inch) pitas
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 6 ounces fresh portobello mushrooms 
  • 2 medium tomatoes, cut into 1/4-inch-thick slices 
  • 3 ounces goat cheese 
  • 1/2 cup chopped fresh basil 

Preheat a Grill Pan over medium heat. Add the minced garlic to the olive oil then brush over each pita. Sprinkle pitas with half of the salt and half of the pepper and cook until toasted, about 2 minutes per side. Remove from pan and set aside. Sprinkle remaining salt and pepper over the mushrooms and tomatoes. Cook mushrooms in the heated pan until tender, 5-6 minutes. Remove then cook tomatoes for about a minute. While mushrooms and tomatoes are cooking, spread goat cheese on the toasted pitas. Top with cooked veggies, sprinkle with basil then serve.
