Roasted beets with sauteed greens recipe

Roasted Beets w/Sauteed Greens, Serves 4

  • 1 bunch fresh beets with greens 
  • 1/4 cup olive oil, divided 
  • 2 cloves minced garlic 
  • 2 tablespoons chopped onion 
  • Salt and pepper to taste 
Preheat oven to 350 degrees F. Wash beets thoroughly, leaving skins on, and remove leaves. Rinse greens and set aside. Place beets in a small baking dish and toss with half of the olive oil. Cover and bake for 45 to 60 minutes-until a knife easily pierces the largest beet. When beets are almost done, heat remaining oil in a skillet over medium-low heat. Add garlic and onion. Cook for a minute. Tear greens into 2 to 3 inch pieces, and add them to skillet. Cook and stir until greens are wilted and tender. Season with salt and pepper. Serve greens as is, and beets sliced with butter, salt and pepper.
