Banana pudding sugar cookies recipe

The addition of banana pudding to this recipe makes some awesomely delicious snacks! For extra special occasions, try making sandwiches out of them using chocolate ganache or buttercream frosting.

BANANA PUDDING SUGAR COOKIES
Ingredients
  • 2/3 cup shortening
  • 2/3 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 small package instant banana pudding mix
  • 2 1/2 cups flour
Directions
In a large bowl, combine shortening and sugar. Beat until light and fluffy. Add eggs, one at a time then stir in vanilla. Add baking powder, salt and pudding and stir until combined. Add 2 cups of flour then gradually add only enough additional flour to create a workable dough. Cover and refrigerate for at least 2 hours, preferably overnight. Preheat oven to 375 degrees F. Line baking sheets with parchment paper or generously grease. Shape dough into 1 1/2 inch balls and place 2 inches apart. Flatten to a thickness of about 1/4 inch and bake until lightly browned, about 8-10 minutes.
