Pineapple cobbler recipe

Cobbler is a popular dessert, especially when you top it with cream or ice cream. This delightful recipe features pineapple and would make a great addition to your Easter dessert table or for summer entertaining.

PINEAPPLE COBBLER
  • 1 (20 oz.) can pineapple chunks in juice, drained 
  • 1/4 cup packed brown sugar
  • 1 cup flour 
  • pinch salt 
  • 1 cup sugar 
  • 1 tablespoon baking powder 
  • 3/4 cup milk 
  • 1 teaspoon vanilla extract 
  • 1 stick butter, melted 
  • 1 (4 ounce) jar of Maraschino cherries, drained, if desired
Directions
Preheat oven to 375 degrees F. Add pineapple chunks and brown sugar in a small bowl and stir to combine. Set aside. Combine flour, salt, sugar, baking powder, milk and vanilla in a bowl and stir until well combined and smooth. Add butter and stir well. Pour into a 9X13 cake pan and spread evenly. Sprinkle pineapple on top of the batter, and if desired, the Maraschino cherries. Bake for 25 minutes, until the pineapple has sunk into the batter and the batter is puffed and golden. Allow to cool slightly before serving.
