If you like chocolate covered cherries, these brownies are a sure thing!
  • 3/4 cup flour
  • 1 cup sugar
  • 3/4 cup unsweetened cocoa
  • 1 teaspoon baking powder
  • 3/4 teaspoon salt
  • 1/3 cup cherry preserves
  • 1/3 cup water
  • 5 tablespoons butter
  • 1 large egg, lightly beaten
  • 1 large egg white   1/3 cup semisweet chocolate chips
Preheat oven to 350 degrees F. Spray a 9 inch square baking dish generously with cooking spray and set aside. Combine all dry ingredients in a large bowl and whisk to combine. In a small saucepan, combine preserves, water and butter. Bring to a boil over medium heat. Stir frequently to avoid scorching the mixture. Add preserve mixture to the dry ingredients and stir well to combine. Add egg and egg white. Stir until smooth then add in chips. Pour batter into prepared pan and bake for 20-25 minutes, until a toothpick inserted in center comes out with a few moist crumbs.Allow to cool completely before cutting and serving. If desired, dust with powdered sugar and top with a dollop of whipped cream and a maraschino cherry.
