Golden Fudge

2 1/2 cups firmly packed brown sugar
1 cup sugar
1/2 cup butter
1 cup non-dairy liquid coffee creamer
2 1/4 cup butterscotch chips
4 1/2 cups marshmallow creme
1 cup chopped pecans*
1/2 cup raisins*
1/2 teaspoon vanilla
1 t butter rum flavoring
*pecans & raisins can be omitted

Combine sugars, butter & coffee creamer in a heavy 2 1/2 quart saucepan. Place on medium heat & stir until butter is melted. Cook without stirring to 238 degrees (about 15 minutes).
Remove from heat-add butterscotch & marshmallow creme. Stir until thoroughly blended. Add nuts & raisins, if desired, and flavorings.
Pour into 2 greased 8 inchsquare pans. Let set for several hours (or overnight) until firm. Cut into squares.
Store is a closed container to keep fresh.
Makes app 98 pieces.
