Basic vegan muffin recipe

Once upon a time, people with special dietary restrictions were faced with dull, bland, lifeless foods, especially baked goods. Thank heaven those days are long gone!

BASIC VEGAN MUFFINS
  • 1/4 cup margarine
  • 1/2 cup unsweetened applesauce
  • 1/2 teaspoon salt
  • 1/2 cup sugar
  • 1/2 cup packed light brown sugar
  • 2 cups whole wheat flour
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla
  • 1/2 teaspoon cinnamon
  • 1/2 cup soymilk
Directions
Preheat oven to 350 degrees F. Mix all ingredients together until just moistened. Fill muffin cups 3/4 full. Bake 35 minutes.
