Calico muffins recipe

These muffins pair nicely with soups, stews, chilis and other hearty meals.

CALICO MUFFINS


  • 1 1/2 cups flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon basil
  • 1/4 teaspoon rosemary
  • 1/3 cup green onions, chopped
  • 1/3 cup sweet red pepper, chopped
  • 1/4 cup green bell pepper, chopped
  • 1/2 cup butter
  • 1/4 cup fresh parsley, minced
  • 2 eggs
  • 2/3 cup sour cream
  • 1 tablespoon Dijon mustard
  • Directions
    Preheat oven to 400 degrees F. Line muffin tins with paper liners or spray with non-stick spray. In a large bowl, combine flour, sugar, baking powder and soda, and seasonings. Saute onions and peppers in butter until tender. Add parsley and cook for 10 minutes. In a large bowl, beat together eggs, sour cream and mustard-add onion mixture. Add dry ingredients until just moistened. Fill muffin tins two-thirds full. Bake for 15-20 minutes.
