Blueberry cobbler recipe

Blueberry cobbler is hands down one of my favorite desserts to indulge in. It's amazing straight from the oven with a scoop of vanilla ice cream. It is also yummy when served warm with a bit of real cream. No matter how you enjoy it, this recipe is fantastic.

BLUEBERRY COBBLER

  • 2 1/2 cups fresh or frozen blueberries
  • 1 teaspoon vanilla
  • 1/2 lemon, juiced
  • 3/4 cup sugar
  • 1/2 teaspoon flour
  • 1 tablespoon butter, melted
  • 1 3/4 cups flour
  • 4 teaspoons baking powder
  • 6 tablespoons sugar
  • 5 tablespoons butter
  • 1 cup milk
  • 2 teaspoons brown sugar
  • 1 pinch cinnamon
  • dash nutmeg

  • Directions

    Lightly grease an 8 inch square baking dish. Place the blueberries into the baking dish, and mix with vanilla and lemon juice. Sprinkle with sugar and 1/2 teaspoon of flour, then stir in the melted butter and set aside. In a medium bowl, stir together remaining flour and sugar and baking powder. Cut in butter with a pastry blender or a fork. Make a well in the center and stir in the milk. Mix just until moistened.
    Preheat the oven to 375 degrees F. Spoon batter over the blueberries mixture, making sure to NOT cover the berries completely. Mix together the cinnamon and brown sugar and sprinkle on top.
    Bake until the top is golden brown, approximately 22-25 minutes.
