KEY LIME CHEESECAKE

  • 1 1/2 cups graham cracker crumbs

  • 1 cup sugar
  • 1 tablespoon flour
  • 3 eggs
  • 1 tablespoon grated lime zest
  • 2/3 cup key lime juice

Directions
Preheat to 300 degrees F. In a medium size bowl, combine graham cracker crumbs and butter the press into bottom and up sides of buttered springform pan and set aside. Using a mixer, beat together cream cheese, sugar, zest and flour until smooth and creamy. Add eggs, one at a time, until smooth. Add juice and beat until just combined. Pour into prepared pan. Bake 1 hour, or until almost set in the center. When done, turn the stove off and open the door partially and allow cake to cool in the oven for an hour before refrigerating until completely cooled.
