Baked strawberry oatmeal recipe from Driscoll's Berries

Tired of traditional oatmeal? Try this fun and tasty baked strawberry oatmeal. For an added "Wow" delight
your kids by cutting the finished product into whimsical shapes using cookie cutters. Mom Blogger, Kristy Bernardo, created this recipe. It is a year round favorite she makes for her family.

INGREDIENTS
  •  2 cups oats (quick-cooking)
  • 1/2 cup brown sugar
  • 1 1/2 cup milk
  • 1 teaspoon baking powder
  • 1 large egg, beaten
  • 7 whole Driscoll's strawberries, hulled
  • Driscoll's Blueberries, Strawberries and/or Raspberries (optional for topping)
Directions
In a large bowl, mix together oats, brown sugar, milk, baking powder and a beaten egg. In a separate bowl puree strawberries with an immersion blender or use a a blender or food processor to puree the strawberries. Mix pureed strawberries into oat mixture. Pour oat mixture into 13x9 greased baking dish. Bake for 15-20 minutes at 375 degrees until mixture is thick and slightly firm. Remove from oven, let sit five minutes then cut into squares and serve. Optional: For added fun use favorite cookie cutters to cut out shapes from oatmeal. Place shapes on plates and create designs on top with fresh Driscoll's berries. Optional toppings: Before baking sprinkle brown sugar (about 1/4 cup) on top of the oatmeal.

Blueberry cakelettes recipe from Driscoll's

INGREDIENTS 
  • 7 tablespoons softened butter, plus more for greasing 
  • 1/3 cups sugar 
  • 2 large eggs, beaten 
  • 1/3 cups self-rising flour 
  • 1/4 cups almonds, ground 
  • 1/2 teaspoons baking soda 
  • 1/4 cups 2% milk 
  • Finely grate zest of 1 lime 
  • 2 packages (6 ounces or 1 1/4 cup each) Driscoll's Blueberries 
  • Coarse Sugar, for garnish 
  • 1 cup whipped cream 

Directions
Preheat oven to 350°F. Grease 6 muffin large cups with butter. Line bases with rounds of parchment paper to prevent sticking. Combine remaining 7 tablespoons butter and sugar in bowl; beat with a mixer at medium speed until light and fluffy. Add eggs, one at a time, beating well. Fold in flour, almonds and baking powder. Gently stir in milk and lime zest. Place a layer of blueberries in bottom of each muffin cup. Fold remaining blueberries into the batter. Spoon batter into muffin cups. Bake about 25 minutes or until cakelets are springy to the touch. Remove from oven and cool in pan. Run a sharp knife around edge of each cakelet, then invert pan. Remove parchment paper and serve, top with coarse sugar and whipped cream.

Lighten Up Tip 
Lighten up this recipe by using baking spray instead of butter on the pans; by using light whipped cream or skipping it altogether; or by substituting 1% milk in the batter.

Helpful Tip 
To cut the rounds of parchment paper, lay the empty muffin cups on top of parchment paper, trace around the bottom outside edge and cut. With less than a tablespoon of added sugar per serving, and bursting with fresh blueberries, these little cakes are full of flavor and antioxidants.
