Grilled pineapple sundae recipe

This unique summer dessert will make you dream of a tropical getaway.

GRILLED PINEAPPLE SUNDAE

  • whole pineapple, cut into half, cored and fruit cut into chunks, save the shells
  • juice from two limes
  • 1/4 cup honey
  • teaspoon cinnamon
  • 2 tablespoons brown sugar
  • 1 pint of your favorite vanilla or fruit flavored ice cream/frozen yogurt (I like Ben and Jerry's Pina Colada or Cake Batter flavors personally)
  • toasted coconut
  • macadamia nuts, toasted and chopped
  • maraschino cherries
  • whipped cream

Directions
Place the pineapple chunks, lime juice, honey, cinnamon and brown sugar in a bowl. Mix to combine and let marinade for at least a half hour. Heat grill for medium heat. When grill is hot, place the pineapple in a pan and sear. Place pineapple shells cut side down and sear as well. When done, split the pineapple chunks between the two shells, top with two scoops of ice cream and top with coconut, macadamia nuts, whipped cream and cherries. Serve immediately.

Pineapple cobbler recipe

Cobbler is a popular dessert, especially when you top it with cream or ice cream. This delightful recipe features pineapple and would make a great addition to your Easter dessert table or for summer entertaining.

PINEAPPLE COBBLER
  • 1 (20 oz.) can pineapple chunks in juice, drained 
  • 1/4 cup packed brown sugar
  • 1 cup flour 
  • pinch salt 
  • 1 cup sugar 
  • 1 tablespoon baking powder 
  • 3/4 cup milk 
  • 1 teaspoon vanilla extract 
  • 1 stick butter, melted 
  • 1 (4 ounce) jar of Maraschino cherries, drained, if desired
Directions
Preheat oven to 375 degrees F. Add pineapple chunks and brown sugar in a small bowl and stir to combine. Set aside. Combine flour, salt, sugar, baking powder, milk and vanilla in a bowl and stir until well combined and smooth. Add butter and stir well. Pour into a 9X13 cake pan and spread evenly. Sprinkle pineapple on top of the batter, and if desired, the Maraschino cherries. Bake for 25 minutes, until the pineapple has sunk into the batter and the batter is puffed and golden. Allow to cool slightly before serving.

Pineapple smoothie recipe

Remember, smoothies are only as healthy as you make them! If you are watching your calories and fat intake, you will want to substitute a lower fat milk for the buttermilk.

PINEAPPLE SMOOTHIE
  • 3/4 cup unsweetened pineapple juice
  • 1/2 cup 1% buttermilk
  • 1 cup ice cubes
  • (1) 8 ounce can unsweetened crushed pineapple
  • 2 tablespoons sugar
Directions 
Combine all ingredients and blend until smooth-about 1 minute. Pour into glass and serve immediately.

Simple fruit salad recipe

This easy to make fruit salad is versatile-serve it with breakfast or brunch, as a part of your lunch or as a healthier dessert option. If you want to lighten the recipe up, use fresh peaches and pineapple instead of canned and sprinkle with a touch of sugar.

SIMPLE FRUIT SALAD
Ingredients
  • large can pineapple chunks
  • large can peach pie filling
  • 2 apples, peeled and chopped
  • 2 bananas, peeled and sliced
  • 2 kiwis
  • 1 pint strawberries
  • 1 pint blueberries
  • 1 cup candied pecans
Directions
In a large bowl, combine peach filling and pineapple, reserving pineapple juice. Pour juice in a small bowl and add chopped apple. Allow to soak for 10 minutes. While apples are soaking, peel and slice kiwi, set aside. Add apples to large bowl and place bananas in the juice, soaking for 10 minutes. While bananas are soaking, remove the tops from the strawberries and cut into quarters. Add to large bowl. Add blueberries and pecans to bowl, gently mix all ingredients together. Garnish with kiwi slices. Cover and chill until ready to serve.

Honeyed garlic chicken recipe

This Asian themed entree is made in the crockpot, so it can cook while you are busy with more important things.Very important in these last few days leading up to Christmas.

HONEYED GARLIC CHICKEN
Ingredients
  • 1 cup brown rice
  • 10 boneless chicken breasts
  • 3/4 cup honey
  • 3/4 cup soy sauce
  • 1/3 cup ketchup
  • 2 cloves garlic, crushed 
  • 1 teaspoon ground ginger
  • dash ground cloves
  • 20 ounce can pineapple chunks, drained with juice reserved
  • 2 tablespoons cornstarch
  • 1/4 cup cold water
Directions
Place uncooked rice in the bottom of slow cooker and top with chicken breasts. In a bowl, whisk together honey, soy sauce, ketchup, garlic, ginger, cloves and pineapple juice. Once the mixture is smooth, pour into slow cooker. Cover and cook on high 3-4 hours, until chicken is cooked completely through. Add pineapple 15 minutes before serving to heat. When ready to serve, remove chicken from slow cooker. Mix corn starch and water in a small bowl then blend into rice and sauce mixture. Allow to cook for another 10-15 minutes before serving.
