Baked strawberry oatmeal recipe from Driscoll's Berries

Tired of traditional oatmeal? Try this fun and tasty baked strawberry oatmeal. For an added "Wow" delight
your kids by cutting the finished product into whimsical shapes using cookie cutters. Mom Blogger, Kristy Bernardo, created this recipe. It is a year round favorite she makes for her family.

INGREDIENTS
  •  2 cups oats (quick-cooking)
  • 1/2 cup brown sugar
  • 1 1/2 cup milk
  • 1 teaspoon baking powder
  • 1 large egg, beaten
  • 7 whole Driscoll's strawberries, hulled
  • Driscoll's Blueberries, Strawberries and/or Raspberries (optional for topping)
Directions
In a large bowl, mix together oats, brown sugar, milk, baking powder and a beaten egg. In a separate bowl puree strawberries with an immersion blender or use a a blender or food processor to puree the strawberries. Mix pureed strawberries into oat mixture. Pour oat mixture into 13x9 greased baking dish. Bake for 15-20 minutes at 375 degrees until mixture is thick and slightly firm. Remove from oven, let sit five minutes then cut into squares and serve. Optional: For added fun use favorite cookie cutters to cut out shapes from oatmeal. Place shapes on plates and create designs on top with fresh Driscoll's berries. Optional toppings: Before baking sprinkle brown sugar (about 1/4 cup) on top of the oatmeal.

Maple oat bread recipe

This hearty bread features the yummy flavor of maple. It makes a delicious toast for breakfast and even even tastier bread for sandwiches.

MAPLE OAT BREAD
  • 1 cup old-fashioned oats
  • 1 cup boiling water
  • 1 (.25 ounce) package active dry yeast
  • 1 1/3 cups warm water (110-115 degrees)
  • 1/2 cup maple syrup
  • 2 teaspoons oil
  • 1 1/2 teaspoons salt
  • 3 1/2 cups  flour
TOPPING
  • 1 egg white, lightly beaten
  • 2 tablespoons old-fashioned oats
Directions
Place oats in a blender or food processor and process oats for 5-10 seconds, until coarsely chopped. Pour chopped oats and boiling water to a small bowl. Let stand until mixture cools to approximately 115 degrees F. In a large mixing bowl, dissolve yeast in 1/3 cup warm water. Add syrup, oil, salt, oat mixture and 2 cups flour and beat until smooth. Stir in enough remaining flour to form a soft dough.
Turn onto floured surface and knead until smooth and elastic(8-10 minutes).  Place in an oiled bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour.
Punch dough down. Turn onto a lightly floured surface. Shape into a flattened 9-in. round loaf. Place in a greased 9-in. round baking dish. Cover and let rise until doubled, about 45 minutes. Preheat oven to 350 degrees F. Brush with egg white; sprinkle with oats. Bake for 30-35 minutes or until golden brown. Remove from pan to a wire rack to cool.

OATMEAL COOKIES
Ingredients
  • 1 cup shortening
  • 1 cup sugar
  • 1 cup packed brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 3 cups old-fashioned oats
  • 1 1/2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 cup chopped walnuts (optional)
  • 1/2 cup raisins (optional)
Directions
Preheat oven to 375 degrees F. Cream shortening and sugars in a large mixing bowl. Beat in eggs and vanilla. Combine the oats, flour, baking soda and salt and gradually add to creamed mixture. Stir in walnuts and raisins, if desired. Drop by tablespoonfuls onto ungreased baking sheets, allowing plenty of room for cookies to spread while baking. Bake for 10-12 minutes or until golden brown.

Peanut butter oatmeal cookie recipe

I used to work in a local bakery that specialized in oatmeal cookies that weighed in at a quarter pound each. The peanut butter ones were my favorite. While not the same recipe, this comes darn close!

PEANUT BUTTER OATMEAL COOKIES
Ingredients
  • 1 1/2 cups shortening
  • 1 1/2 cups peanut butter
  • 2 cups packed brown sugar
  • 3 eggs
  • 2 teaspoons vanilla
  • 3 cups quick cooking oats
  • 2 cups wheat flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
Directions
Preheat oven to 350 degrees F. Cream shortening and peanut butter together in a large bowl. Add brown sugar, eggs and vanilla. Mix until well combined. Combine remaining ingredients than add to peanut butter mixture. Mix well. Drop by rounded teaspoonfuls onto an ungreased baking sheet. Flatten slightly and bake 10-12 minutes, until golden.
